Rick’s Refreshing Shamrock Shake
The Shamrock Shake has been offered by McDonald’s restaurants since 1970 (it even used to have its own mascot — Uncle O’Grimacey!). Every year since then, around St. Patrick’s Day, the shake joins the menu for a limited time. Like leprechauns, however, this frothy drink has developed somewhat of an elusive availability, as it only pops up once a year in select McDonald’s venues throughout the country. We didn’t want to wait, and made our own, both with ice cream or a lighter version using vanilla yogurt.
Yields: 1 giant shake, 2 generously sized shakes, or 4 medium shakes
Prep Time: 10 Minutes
Cook Time: No cooking – only blending!
3 cups vanilla frozen yogurt or your favorite vanilla ice cream
1 3/4 cups 1% milk (try vanilla yogurt or soy creamer for fewer calories)
1/4 teaspoon spearmint or peppermint extract
(spearmint is our preference; use whichever you prefer)
Several drops green food coloring
Freshly made whipped cream or Redi-Whip (for garnish)
Shamrock sprinkles (for garnish)
Blend all ingredients in a blender until completely thick and smooth.
Pour into tall glasses. Top with whipped cream, and green shamrock sprinkles.
