DESCRIPTION
Quietdrive's own Matt Kirby sent Rick his "Kirby Favorite" Lemon Cream Pie! It's a MUST and sooo easy to make! Hey Rick! This is Matt Kirby from the band Quietdrive. INGREDIENTS

PIE SHELL:

1 cup whipping cream
2 TBSP sugar
1 TSP vanilla
1 TBSP orange liqueur OR 1/2 TSP almond extract

Whip cream with sugar, vanilla and liqueur until stiff. Spread cream on bottom and up the sides of a 9" deep dish pie plate. Freeze until firm.

FILLING:

2 cups whipping cream
1 lemon, grated and squeezed. (remove large pieces of membrane and seeds)
1 cup sugar

DIRECTIONS

STIR together cream, lemon and sugar. Do not beat. Just stir until sugar is dissolved.

POUR into frozen shell and freeze.

REMOVE from freezer 10 minutes before slicing. Serve with 1 or 2 TBSP frozen raspberries in syrup.
