Wild Rice Stuffing
Here's a completely different take on holiday turkey stuffing - made with wild rice! Moist and tasty, you may be completely converted after trying this recipe.

INGREDIENTS
Turkey Giblets and two turkey wings
4 -1/2 cups water
1 package (6 ounces) long grain and wild rice mix
1 celery rib, chopped
1 small onion, chopped
1/2 cup butter
2-1/2 cups seasoned Mrs. Cubbison's stuffing
(If using cubed stuffing, crush it before using)
1-1/2 cups chicken broth
Optional: one finely diced apple (approx. 1 cup), one finely diced green pepper (approx. 1/2 cup)
DIRECTIONS
Remove liver from giblets if desired. In large saucepan combine water with giblets and turkey wings. Cover and simmer for 2 to 2-1/2 hours until tender and until turkey meat falls from the bone.
Meanwhile, prepare the rice according to package directions, using chicken broth in place of water. In a small skillet, saute celery and onion in butter and add to the rice.
Drain and dice giblets. Remove skin from turkey wings and set aside. Shread cooked turkey wing meat. Stir stuffing, broth from cooked wings, giblets and turkey wing meat into rice.
Spoon into an ungreased 1-1/2 quart baking dish.
Bake, uncovered, at 350 dees-grees for 25-30 minutes or until heated throughout. Serve.
