Stuffed French Toast
Pamper Mom with breakfast in bed...starting with Rick's Stuffed French Toast! Do it up right with only genuine maple syrup....mmmmmmmmmm!
Yields: 1 serving

Cook Time: 5 minutes
INGREDIENTS
2 oz. of cream cheese
1 tablespoon of powdered sugar (for batter mixture)
1 egg
1 cup of heavy cream
1 tablespoon of vanilla extract
¼ teaspoon of salt
1 tablespoon of brandy (optional)
2 slices of thick sourdough bread
Fresh blueberries
2 oz. of fruit preserving plus extra for garnish
1 teaspoon butter (for griddle)
1 teaspoon powdered sugar (for garnish)
1/2-3/4 cup Genuine Maple Syrup (warmed in microwave) - more or less to taste
DIRECTIONS
Preheat flat top grill or skillet to medium so that water droplet when dropped on surface skirts across it. Right before you're ready to cook the French Toast, melt the butter on the skillet.
In a bowl, combine cream cheese and powdered sugar and set aside. In another bowl, combine eggs, heavy cream, vanilla extract, salt, cinnamon and brandy and set aside.
Spread 2oz of the cream cheese mixture on one slice of bread topped with blueberries and put the other slice on top to make a sandwich.
Dip the sandwich in the egg mixture and cook with melted butter on a flat top grill or skillet. Cook until heated all the way through and golden brown on both sides.
Cut diagonally, dust with powdered sugar, and serve with whip cream, fresh fruit and cinnamon garnish, with the warm, genuine maple syrup on the side.
