Rick Dees' World Famous Power Pancakes!
Start with this Power Pancake recipe, add some cut up strawberries, and/or blueberries and some maple syrup on top.....mmmmmmmm! Getting healthy never tasted so good!
Yields: 12 pancakes
Prep Time: 5 minutes
Cook Time: 5-10 minutes for the full stack of pancakes
INGREDIENTS
1 cup sifted unbleached flour
½ cup almond meal
½ cup rolled oats uncooked (like Quaker Oats)
3 level teaspoons baking powder
1 teaspoon kosher salt
2 table spoons granulated sugar
2 table spoons brown sugar
3 eggs
1 cup buttermilk (Optional: 1/2 cup buttermilk with 1/2 cup sour cream)
1/2 cup melted butter
¼ teaspoon cardamom
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
2-3 fresh sliced strawberries or 1/4 cup fresh blueberries (optional, for garnish)
DIRECTIONS
In a bowl, sift together flour, almond meal, rolled oats, baking powder, salt and sugar.
In another bowl, beat eggs until light and fluffy for about 2 minutes. Add melted butter, buttermilk, cardamom and vanilla.
Slowly add sifted ingredients to wet ingredients.
Slowly heat the griddle or large pan. To test; drop a little cold water onto the surface and the water should roll off in drops.
Use ¼ cup of batter for each pancake. Cook until bubbles form on surface and edges are dry.
Turn and cook for 2 minutes more or until browned on the underside.
Top with butter, and drizzle with your favorite REAL maple syrup. Serve with fresh sliced strawberries, fresh blueberries, or your favorite fruit. Enjoy!
