Healthy Lemon Pancakes
These healthy living pancakes are so incredibly delicious that you'll never know they're lighter fare! Try this super easy recipe -- you'll be amazed!
Yields: Serves 8
Prep Time: 15 minutes
Cook Time: 3-5 minutes each panake
INGREDIENTS
Dry ingredients:
2 cups whole wheat flour
1/4 cup Truvia
a couple of pinches of sea salt
1 teaspoon baking powder
1 teaspoon baking soda
3 Tablespoons raw sugar
Wet ingredients:
1 cup whole milk
1/3 cup fresh lemon juice
1/2 cup almond milk
1/2 cup sour cream
1/2 cup ricotta cheese
3 Tablespoons lemon zest
1 teaspoon vanilla extract
3 egg yolks
Whip the 3 whites into thick egg whites
DIRECTIONS
Mix all wet ingredients.
Then, fold the dry ingredients into
the wet ingredients. Then, fold in the egg whites. Mix lightly.
Preparation:
Heat griddle, spray with Pam. Cook pancakes.
Then spray the griddle again and cook and egg, sunnyside up, until done.
Put the egg on top of the stack of 3 pancakes. Squeeze a little fresh lemon juice on top of the egg, then ladle some agave syrup over the top.
