Uncle Rigdon's Peach Cobbler
When peaches are fresh and ripe right off the tree, this is where they need to end up!
Yields: One 9-inch pie

INGREDIENTS
CRUST:
4 cups all purpose flour
1 cup vegetable shortening
1 cup butter
1 teaspoon salt
2 Tablespoons sugar
1 egg
1 Tablespoon white cider vinegar
1/2 cup water
PEACH MIXTURE:
7 or 8 large, fresh, ripe peaches (peeled and cut into small slices)
1 1/2 teaspoons cinnamon
1 teaspoon nutmeg
2 Tablespoons vanilla extract
1/2 cup butter (melted)
1 cup sugar
1 cup brown sugar
1/2 teaspoon salt
DIRECTIONS
Mix flour, sugar, and salt. Cut in shortening, then butter. Beat egg, vinegar, and then add water. Pour in water to flour mixture, and mix lightly. Form into a "ball" and place in refrigerator to chill.
*Note: This recipe produces enough dough for two cobblers, so don't feel you have to use it all. If you desire, use half for the cobbler and half for a pie crust.
PEACH MIXTURE:
Mix peaches and other ingredients in a bowl until well mixed. Then take your hands and pinch off pieces of dough and push it down into the mix.
Bake in 350 degree oven for 50-55 minutes. Serve hot, with liberal helpings of old fashioned vanilla ice cream!
