Uncle Rigdon's Lemon Love Pie
Make this with Pie Crust #3, and you'll have your love at your feet for the rest of your life!
Yields: One 9-inch pie

INGREDIENTS
2 cups sugar
1 heaping tablespoon All Purpose Flour
1 heaping tablespoon white cornmeal
4 eggs
1/4 cup butter, melted (actually between 1/4 and 1/3 cup)
1/4 cup milk (half milk, half Half 'N Half)
4 tablespoons grated lemon peel
1/4 cup fresh squeezed lemon juice
1 Tablespoon vanilla extract
DIRECTIONS
Combine sugar, flour, and cornmeal in a large bowl. Toss lightly with a fork to mix.
Add eggs, butter, milk, lemon peel, lemon juice, and vanilla extract.
Beat with rotary or electric mixer until smooth and thoroughly blended. Pour into pie shell.
Bake in moderate oven 350-375 degrees for 35-50 minutes, or until top is golden brown. Cut pie while warm. Eat pie.
