Brown Sugar Pie
DESCRIPTION
Decadent - yes. Rich- most assuredly. Southern - you BET!

Made from an old Southern Recipe, Rick's Brown Sugar Pie will quickly become one of your favorites. The easiest part about it is that it is very easily made out of simple things that you usually have on hand. The end result will leave you with a pie that has a soft, creamy, custardy brown sugar filling - a sweet conclusion to any meal. Yummmmmmmmy!

Yields: 8 to 12 slices
Prep Time: About 15-20 minutes to prep
Cook Time: Approx. 20 minutes

INGREDIENTS

Crust
One 9-inch Pie Crust made with Rick's Favorite Pie Crust Recipe

Filling
2 cups of brown sugar
1 stick of butter(1/2 cup)
1/4 teaspoon of salt
2 large eggs
3 level Tablespoons of all purpose flour
1/2 cup of half-n-half or cream
1 Tablespoon vanilla extract

DIRECTIONS

Pie Crust
Rick's Favorite Pie Crust Recipe makes enough dough for a double crust. We recommend your making the full pie crust recipe and freezing half for future use. When crust is in the pie plate, with fork prick the bottom of the crust sever times before adding pie filling.

Filling
1. Preheat oven at 350 degrees Fahrenheit.
2. First you want to mix all of the ingredients together and bring them to a boil.
3. Cook the mixture until it slightly thickens. Careful not to over boil it.
4. Pour into an unbaked pie crust. Bake the pie until it sets which should be around 20 minutes.

You may want to adjust the oven setting to 375 degrees Fahrenheit. All ovens are different and cook at different speeds.

Remove from oven, and allow to cool.

To go the whole nine yards, serve with a dollop on top of your favorite double-churn vanilla ice-cream!
