Grandma's Cake
DESCRIPTION
Grandma's Cake is one of the moistest, most sumptuous cakes ever! The spices combine with the Bourbon Caramel Sauce to make this cake one that's hard to stop eating!

Yields: 12-15 slices
Prep Time: 25-30 minutes
Cook Time: 45-55 minutes

INGREDIENTS


2 cups flour
1½ teaspoons baking soda
¼ teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon vanilla
1 cup vegetable oil
2 Tablespoons melted butter
3 eggs, beaten
1 cup buttermilk
1½ cups sugar
1 cup cooked, chopped prunes, mashed down
1 cup chopped pecans or walnuts
1 Tablespoon powdered sugar (for garnish)

Bourbon Sauce
1 cup sugar
A pinch of salt
½ cup buttermilk
½ teaspoon baking soda dissolved in the buttermilk
1 tablespoon corn syrup
1 tablespoon bourbon
¾ stick (6 tablespoons) butter
1 teaspoon vanilla extract


DIRECTIONS

Preheat oven to 325 degrees and butter and line 8x8" or 9x9" baking pan with parchment paper.

Prepare Cake Batter
Sift dry ingredients together.

Put oil, melted butter, eggs, buttermilk, and sugar into a mixing bowl and beat well together.

Add dry ingredients, and then fold in prunes and nuts.

Bake for 45- 55 minutes or until the center springs back when you touch it. Take from the oven and let it cool 10 minutes.

Bourbon Sauce
While the cake is baking, prepare the cake's sauce.

Mix all ingredients together in small saucepan and bring to a boil. Cook for one minute. Set aside.

Invert still-warm cake onto a serving platter. Spoon sauce over and let it soak in, using all the sauce. Dust with powdered sugar.

Serve warm....and get outta the way!!!!
