Coca-Cola Cake From Chef Boy R Dees
This super moist, wickedly delicious cake is inspired by the Cracker Barrel’s wildly famous double fudge Coca-Cola Cake. Make this just once – and we promise you’ll be hooked!
Yields: 10-16 servings (depending on how large you slice it!)

Cook Time: 25-25 minutes
INGREDIENTS:
Cake Mixture:
1 cup Coca-Cola
1 cup corn oil
1 stick butter
2 heaping Tablespoons dark cocoa powder and 2 heaping Tablespoons light or regular cocoa powder
2 cups sugar
2 cups all purpose flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1-1/2 Tablespoons vanilla
Frosting:
1/4 pound butter (one stick)
4 tablespoons dark cocoa powder
6 tablespoons cream
1 Tablespoon vanilla
1/2 cup pecans chopped
1 pound confectioners sugar (Use about 3/4 of one 16 ounce box, just so the frosting is not too sweet), plus a pinch of salt
DIRECTIONS
Preheat oven to 350 Dees-grees.
In a sauce pan, bring Coca-Cola, oil, butter, and cocoa to a boil. Mix together the sugar, flour and salt.
Pour the boiling liquid into the flour mixture and beat until blended well. Add the eggs, buttermilk, soda, and vanilla to the batter and beat well.
Pour into a greased and floured 9″x13″ sheet cake pan, and bake at 350 degrees for 25-35 minutes, or until tooth pick inserted into the center comes out almost clean.
For Frosting: Combine the butter and cocoa in a saucepan, and heat the mixture until it melts. Add the cream and mix well. Beat in the remaining ingredients.Spread on the hot cake while it is still warm.
Cool and cut. Serve with a dollop of your favorite vanilla ice cream…mmmmmmmm!
